We know the holidays are coming up, and without our favorite sweet treats, this special time won’t be complete! Try out this top 9 allergen free, zesty orange cake for a delightful meal to share!
Ingredients:
2 ½ cups oat flour (or other wheat substitute)
½ teaspoon baking powder
1 cup sugar
3 tbsp orange zest (from ~2-3 oranges)
Chef’s Tip: Zest oranges before juicing for ease.
1 cup orange juice (from ~2-3 oranges)
1 cup canola oil
¾ cup applesauce
1 tbsp vanilla extract
Directions:
Preheat oven to 325F. Use an 8x4 inch baking pan and wrap in parchment paper.
Whisk the oat flour and baking powder in one bowl.
Mix the sugar and orange zest in another bowl until the mixture is light orange.
Add the oil, applesauce, orange juice, and vanilla extract and combine.
Mix the dry and wet ingredients. Pour batter into the cake pan.
Bake for 1 hour and 10 minutes; insert a toothpick to check if the cake is finished (it should come out with a few crumbs).
Use your favorite toppings to decorate! Enjoy!
Chef’s Tip: Use Enjoy Life mini chocolate chips to the top, since they are also top 9 free and add a sweet hint!
